What is Pavlova?

It is a meringue dessert with a crisp crust and soft, light inside, usually topped with fruit and whipped cream.

250g Flavoured Whipping it Up Mixture of your choice

100ml  Warm (Room Temperature) Water

1 Teaspoon White Vinegar


Preheat oven to 275°f, 100°c Fan, 1/2 Gas

  1. Place 250g mixture and 100ml water into a Grease free clean mixing bowl using a whisk attachment, whisk until light and fluffy, while whisking add 1 teaspoon of white vinegar or cider vinegar, keep mixing until stiff.
  2. Fill a piping bag, using various nozzles eg 1M Star tip or large round tip is great. Pipe on to greaseproof paper on a baking tray.
  3. Bake for 90 minutes.
  4. Turn off the oven and leave in the oven to cool for at least 2-3 hours with the door closed.

Top Tips

To make a ripple effect coat the inside of your icing bag with 6 stripes of colour, before filling.
