Whipping It Up Mini Pavlovas

They are individual meringue desserts with a crisp crust and soft, light inside, usually topped with fruit and whipped cream.

250g Flavoured Whipping it Up Mixture of your choice

70ml  Warm (Room Temperature) Water

1 Teaspoon White Vinegar

300ml Double Cream

2 Heaped TBSP of Sugar and Crumbs Natural Flavoured Icing Sugar of your choice

Dark or Milk S & C Tempered Chocolate


Preheat oven to 275°f, 100°c Fan, 1/2 Gas

  1. Place 250g mixture and 70ml water into a Grease free clean mixing bowl using a whisk attachment, whisk until light and fluffy, while whisking add 1 teaspoon of white vinegar or cider vinegar, keep mixing until stiff.
  2. Fill a piping bag, using various nozzles eg 1M Star tip or large round tip is great. Pipe on greaseproof paper on a baking tray.
  3. Bake for 50 minutes.
  4. Turn off the oven and leave it in the oven to cool for at least 2-3 hours with the door closed.
  5. Whisk the cream with 2 heaped tablespoons of Sugar and Crumbs Natural Flavoured Icing sugar of your choice.
  6. Pipe or spoon the whipped cream onto the meringue nests and decorate with summer fruits berries of your choice.
  7. Melt a little dark S & C Tempered chocolate and put it into a piping bag. carefully drizzle the chocolate over the top of the whole dessert.

Top Tips

To make a ripple effect coat the inside of your icing bag with 6 stripes of colour, before filling.
