Victoria Sponge Cake with Velvet Vanilla Buttercream

A luscious moist sponge cake filled with our Sugar and Crumbs Velvet Vanilla Natural Flavoured buttercream (or any flavour of your choice), topped with fruit for a cake you wont be able to resist!

Instructions

Victoria Sponge Cake with Velvet Vanilla Buttercream

1. Pre-heat the oven to 140 C fan, 325 F, Gas mark 1.

2. Line and grease 2 x 8 inch sandwich tins.

3. Place the caster sugar and margarine plus 50g of the Sugar and Crumbs Velvet Vanilla Natural Flavoured Icing Sugar in a clean mixing bowl and cream together until combined.

4. Crack the eggs into a clean bowl and then add to the sugar and butter mixture one at a time until they are all in and combined.

5. Sift in the flour and fold in with a spatula a little before mixing with the mixer for 15 seconds. Be careful to not over beat as you will lose too much air.

6. Separate the batter mixture between the two tins and bake in the oven for 50 minutes until golden in colour and when you insert a cocktail stick it comes out clean.

7. Once cooked take out of the oven and leave in the tin for 5 minutes before transferring to a wire cooling rack to cool completely.

To Make the Buttercream

8. In a clean mixing bowl add the softened butter and beat for a few minutes until creamy.  Add in the Sugar and Crumbs Velvet Vanilla Natural Flavoured Icing Sugar and fold in before mixing with the mixer.  Let it cream together for 5 minutes adding a spoonful of hot water as required to help get the right creamy but thick consistency.

9. Once the cake is cooled place one of the sponges onto the serving plate or cake drum. Using a palette knife spread the buttercream across the sponge in an even layer.  Add some fresh fruit in an even layer.

10. Add the second sponge flat side down and cover the top with a layer of buttercream. Cover with fresh fruit to decorate or just sieve Sugar and Crumbs Velvet Vanilla Natural Flavoured Icing Sugar (or any flavour of your choice) over the top.

11. If you wish you can also sprinkle with Sugar and Crumbs Velvet Vanilla Natural Flavoured Icing Sugar (or any flavour of your choice) without the fruits before serving.

A family favourite made even tastier with our Sugar and Crumbs Velvet Vanilla Natural Flavoured Icing Sugar (or any flavour of your choice).  You can also add a layer of jam between the two sponges if you wish.
