What is Vegan Tiffin Bar?

This Vegan Tiffin Bar is a lovely chocolate bar packed with ingredients such as ginger nuts, dried fruits and nuts.

75g Coconut oil and a little extra for the tin.
200g Callebaut Dark Chocolate
2 Tbsp Golden Syrup
200g Vegan Ginger Nuts
75g Dried Cranberries
75g Assorted nuts like walnuts, hazelnuts, pecan nuts.
10 Glace Cherries
Sugar and Crumbs Sprinklelicious Sprinkles (optional )
Line a brownie pan with Greaseproof Paper.


1.   Lightly oil the Brownie Pan with Coconut Oil and then line with Greaseproof Paper.

2. Melt the chocolate along with the golden syrup in a bowl in short 30 second bursts in the microwave.

3. Break the ginger nuts into 4 or 5 pieces and put into a large bowl with the dried fruit and nuts.

4. Pour the melted chocolate mixture onto the biscuits and fruit mixture and mix until well combined.

5. Spoon the Mixture into the prepared brownie tin and using the back of a spoon smooth out the top and press down into the pan. this ensures the mixture will be firm enough to cut into pieces rather than breaking up.

6. Cut the Glacé cherries in half and arrange over the top of the mixture.

7. This is optional but you can sprinkle the Sprinklecious Sprinkles over the top to add colour especially if it is for a celebration

8. Chill in the fridge for 2 hours or until it has set hard, then cut into 24 mini squares or 12 large ones.

9. This Tiffin Bar will keep in the fridge for a week.
