Vegan Large Jaffa Cake

What is Vegan Large Jaffa cake?

The Vegan large Jaffa Cake so quick and easy to make and is made entirely by using non-animal products. It is a light delicious sponge flavoured with our Orange Zest Natural Flavoured Icing Sugar with a spoonful of orange marmalade on the top and covered in melted non-dairy dark chocolate.

150g Self Raising Flour
90g Sugar and Crumbs Orange Zest Natural Flavoured Icing Sugar
150ml Soya Milk
75ml Vegetable Oil
Marmalade, any flavour you desire
For the topping
75g Vegan Butter
150g Vegan Dark Chocolate

1. Preheat the oven to 160c Gas mark 3, 325F, lightly grease and line an 8-inch sandwich tin.

2. In a mixing bowl mix the Soya Milk, flour, Natural Flavoured Icing Sugar and vegetable oil until well combined.

3. Carefully pour the mixture into your prepared tin.

4. Bake in the oven for 15-20 minutes until it is golden brown and a cake tester comes out clean when inserted into the centre of the cake comes out clean.

5. Cool on a wire tray.

6. Spread spoonfuls of marmalade on to the top of the cake. Making sure it is not too near the edge.

7. Melt the non-dairy butter and non-dairy chocolate together using the bain-marie method or melting in a microwave on 10-second bursts,

8. Put the wire cooling rack that the Cake layer is on into a baking tray and carefully spoon the melted chocolate over all the cake until the top is fully coated.

9. Allow setting in the fridge for an hour before serving.
