Valentines Whoopie Pies

Valentines day treats for your sweetheart, soft cake/biscuit hearts with a delicious buttercream centre that brings it altogether

200g Plain Flour 
50g Sugar and Crumbs Cherry or Orange Cocoa Powder 
1tsp Baking Powder 
1/2 tsp Salt 
115g Softened Unsalted Butter 
200g Caster Sugar 
1 Large Egg 
120ml Buttermilk ( or you can use 120 ml milk with 2tsp lemon juice, leave to curdle for 10 mins before using)
Red Food Colouring 
For the Filling 
115g Softened Unsalted Butter 
230g Sugar and Crumbs Black Cherry or Orange Zest Icing Sugar 


1. In a clean mixing bowl cream the butter until smooth and then add in the sugars until creamy, scrape down the sides, beat in the egg and finally the buttermilk and 1tsp of red food colouring.

2. In a separate bowl add the flour, cocoa powder, baking powder and salt, mix together.

3. On a slow speed mix the dry ingredients to the butter/sugar mixture and mix until completely combined.  Be careful to not overheat as this will put air bubbles in the pies.

4.  Whilst your waiting for the mix, place some baking paper over a baking tray and using a heart cutter draw some templates for you to follow (about 6 per tray) leave space between each one.

5. Fill a piping bag with 1/2 the mix and snip off a 1/2 inch off the tip,  pipe a V shape over the heart template, you do not need to fill the centre as the mix will fill it whilst baking.

6. Bake the cookies for approx 10 mins, then leave on the tray to cool as they will be soft.

7. make the buttercream by beating the butter until creamy then add in the icing sugar, mix until combined and smooth.

8. When the pies are cool, match them in twos that are a similar size and lay them out in their twos, place a nozzle of your choice (I’ve used a wilton 2D) in a piping bag and snip off the end to fit, fill with the buttercream.  Pipe onto one heart of each pair and then sandwich together. 

9. They are ready to eat, store in an airtight container for freshness and eat with in 4 days for best taste.
