Tipsy Coconut Ice

This decadent tipsy coconut ice is sure to be a hit when entertaining family and friends, it is for the over 18’s only though as it does contain Irish cream!


What is Tipsy Coconut Ice?

Tipsy Coconut Ice is a sweet treat made of desiccated coconut and condensed milk as well as our Natural Flavoured Icing Sugar and has a shot of Irish cream in there. This recipe can be made using any of your favourite tipples just exchange the Irish Cream for your choice.

235g Condensed Milk

250g sugar and Crumbs Irish cream Natural Flavoured Icing Sugar

200g Desiccated Coconut

15ml Irish cream

Pink Food Gel Colouring

1. Put all the ingredients into a large mixing bowl and mix until all the ingredients have combined together well.

2. Put a liberal amount of icing sugar onto your work surface and empty the Coconut Ice onto it.

 3. Mould together into a ball and divide in half.

4. Colour one half with a drop of pink food colouring gel and keep dusting the ball with icing sugar as it will be very sticky.

5. Shape out the white Coconut Ice using your hands and a rolling pin to form a rectangle shape approximately 1/2 cm thick

6. Now repeat the process with the pink coloured Coconut Ice and place it on top of the white piece.

7. Using the palms of your hands shape the coconut ice into a rectangle shape and neaten up the edges.

8. Place the Coconut Ice onto a piece of greaseproof paper and then onto a baking sheet.

9. Chill in the fridge overnight and then cut into bite-sized pieces.

10. If desired the chilled pieces of Coconut Ice can be dipped in Callebaut Chocolate and returned to the fridge to set.

11. This sweet treat will last up to a month if stored in an airtight container.

Top Tip

If you do not want to use alcohol in your recipe please amend the condensed milk to 250g the same as the Natural Flavoured Icing Sugar.
