Strawberry Milkshake Macarons

Bursting with flavour these little macarons are delicious and great as a homemade gift.

Strawberry Milkshake Macarons

1. Pre-heat the oven to 150 C, 300 F, Gas mark 2 and line two baking trays with greaseproof paper or a macaron mat if you have one.

2. Sift the ground almonds into a bowl and add the icing sugar, mix together.

3. In a separate bowl whisk the egg whites until they form soft peaks, add the caster sugar and whisk until glossy.

4. Fold the egg whites into the dry ingredients and add a little drop of the pink colour in. Mix gently until the colour has spread evenly and then place into a piping bag snipping about 1cm off the end with some scissors.

5. Pipe directly onto the greaseproof paper in blobs the size of a tablespoon and making sure they are evenly spaced until you have 50 blobs which will make 25 macrons.

6. Leave on the side for 10 minutes, 20minutes maximum, so they can dry a little this forms a slight crust and will help them to keep their shape. Bake in the oven for 5 minutes and then turn them over whilst still stuck to the paper and bake for 4 more minutes.

7. Remove from the oven and leave to cool completely.

8. Make the filling by whipping the cream to a soft peak and adding two tablespoons of the Sugar and Crumbs Strawberry Milkshake Natural Flavoured Icing Sugar. Mix in some pink food colouring if you wish the filling to be coloured as well. Place a heaped teaspoon onto 25 of the Macrons and sandwich together with the other plain side.
