Strawberries & Cream Traybake

A delicious afternoon summer traybake that is perfect for afternoon Tea or a garden get together.

What is a Strawberry & Cream Traybake?

A light and moist sponge with a fresh Strawberry layer and covered in a flavoured mascarpone topping with crushed and mini meringues and more fresh strawberries.

Ingredients 

Sponge
 
100g Sugar and Crumbs Strawberry and Pistachio Natural Flavoured Icing Sugar   
150g Caster Sugar 
250g Stork Margarine
250g Eggs ( Approx 5 Medium Eggs) weighed without shell
250g Self Raising Flour
 
Toppings
 
200g Fresh Strawberries
400g Mascarpone 
50g Sugar and Crumbs Strawberry and Pistachio Natural Flavoured Icing Sugar

Instructions
 
  1. Preheat the oven to 160c and line a brownie tin approx 9×9 inch with baking paper, Beat the margarine until creamy then add the sugar and icing sugar and beat in.
  2. Add in the eggs and beat in, then add the flour and fold in and beat slowly until combined.
  3. Pour into the lined tin and spread out and bake in the oven for 30-35 minutes until risen and golden.
  4. Once baked leave to cool fully on a cooling rack.  
  5. Cut a square from the centre of the sponge by cutting an outline leaving a space between the edge of the sponge about 1cm in, cut about 1/3 of the way down the cake use a spoon to scoop out the centre so you have a small lower layer to fill with fruit.
  6. Slice the largest strawberries into slices and make a layer that fills your inner square.
  7. Beat the mascarpone with a beater until smooth and add in the 50g of flavoured icing sugar to add some extra flavour.
  8. Pour this over the strawberry centre and push to cover the strawberries first using a palette knife, continue to cover the whole of the sponge with the rest.
  9. To decorate place more strawberries sporadically over the top with the meringue kisses and crush a few meringues too,  sprinkle these over the top, dust with icing sugar and serve.

Tips 

Best eaten within a day or two

Keep in the fridge when not eating, add the meringues and strawberries just before serving
