Sponge Parkin

This Sponge Parkin is moist and delicious and a tasty treat for Bonfire Night.

What is a Sponge Parkin?

Sponge Parkin is all the ingredients of traditional parkin but without the oatmeal. It is delicious served with just a drink or with Custard or Cream.

Ingredients

 
224g Plain Flour
8g Ground Ginger
5g Bicarbonate of Soda 
1/4 Tsp Baking Powder
2 Eggs beaten
112g Treacle 
112g Margarine
42g Sugar and Crumbs Gingerbread Naural Flavoured Icing Sugar
42g Light Brown Sugar
112ml Milk 
 
 
Instructions
 
 
 
Grease and line a 2LB loaf tin with Greaseproof Paper
 
pre-heat oven to 150c gas mark 4 300F
 

1. Mix together the flour and ground ginger in a mixing bowl.

2. Warm the margarine, sugar, icing sugar and treacle in a pan ( do not boil )

3. Pour the melted margarine mixture on to the flour mixture and add the beaten eggs, bicarbonate of soda and baking powder.

4. add the milk and mix well until runny.

5. Pour the cake batter into your prepared loaf tin and bake in the oven for approximately 90 minutes until the parkin is firm to touch and the cake tester, when inserted into the middle of the cake, comes out clean.

6. Remove from the oven and allow to cool in the tin for 30minutes then cool completely on a wire cooling rack.

7. When the parkin has cooled re=wrap in greaseproof paper, place in an airtight tin and store for 24 hours before serving as this allows the parkin to mature and have a lovely sticky top.
