Red Velvet cupcakes with Velvet Vanilla Buttercream

Red Velvet Cupcakes are a mix of Vanilla and chocolate flavour, finished with our Velvet Vanilla Buttercream for a perfect finish

1) Preheat the oven to 180c and line two cupcake tins with cases, in a small bowl mix the cocoa powder with the vanilla extract
2) In a mixing bowl cream together the butter and sugar and then add the egg yolks, mix on a medium speed
3) Stir the salt into the buttermilk and add a 1/3 of the buttermilk to the mixing bowl and mix, then add a 1/3 of the flour, mix, repeat until all the flour and buttermilk is used up, add the cocoa powder mixture and mix in
4) In a small bowl mix the vinegar, bicarbonate of soda and food colouring and then add this to the mixing bowl, mix on a medium speed making sure you scrape down the sides of the bowl and the bottom to ensure everything has mixed together completely
5) Divide the mixture into your cupcake cases i used an ice cream scoop to divide evenly, bake in the oven for 20-25 mins until well risen and a skewer comes out clean, leave in the tin for 5 mins before transferring to a wire cooling rack to cool completely
6) To make the buttercream beat the butter and icing sugar with a drop of milk and keep mixing for 5 mins until white and creamy (the longer you mix for the whiter the butter cream gets)
7) Break up one of the cupcakes into crumbs, Pipe the buttercream on to the cupcakes as desired and sprinkle with the cake crumbs

Follow the instructions carefully to ensure you get the correct consistency I found the buttermilk quite hard to find but I did find it in the larger tescos and tesco metro
