Plum and Orange Cake

This is a lovely light cake that’s full of the summery flavours of plums and oranges which go together beautifully. Serve warm with an extra dusting of Sugar and Crumbs Orange Zest Natural Flavoured Icing Sugar (or any flavour of your choice) and a generous splash of double cream.

Plum and Orange Cake

1. Pre-heat the oven to 200° C, 180°C fan, 350 F, Gas mark 4.

2. Beat together the eggs and margarine, add the Sugar and Crumbs Orange Zest Natural Flavoured Icing Sugar (or any flavour of your choice) and caster sugar and beat again. Add the flour and mix a final time, so that you have a smooth, thick mixture.

3. Remove the stones from the plums and cut into thin slices. Grease a deep, circular cake tin and arrange the plum slices in concentric circles in the bottom. Pour the cake mixture over the top and spread it out gently so as not to move the plum slices underneath. Place in the oven and bake for 35 minutes.

4. When the time is up, allow the cake to cool in the tin for a few minutes, before turning it out onto a plate. You should end up with the beautiful pattern from the plum slices on display.

5. In a small saucepan gently warm the plum jam, honey, a squeeze of fresh orange juice and a little grated orange zest until you have a nice runny syrup. Use a pastry brush to spread it over the cake. taking particular care to fill in any gaps where the plum juice hasn’t spread.

6. Sprinkle with a little more Sugar and Crumbs Orange Zest Natural Flavoured Icing Sugar (or any flavour of your choice) and drizzle with double cream. Serve while still warm.
