A sugar syrup is a sugar liquid used to flavour cocktails. It is perfect for a glass of proscecco or champagne to turn it into a delicious bellini.

1. Place the sugar and water in a saucepan and bring to the boil stiring until the sugar has completely dissolved. Remove off the heat and leave to cool.
2. Add the sugar syrup to 750ml of Prosecco and serve. Alternatively you can keep in the fridge in a sealed container once cooled and keep for upto 8 weeks.
