Orange Madeleines with Orange Glaze

Orange Madeleines with a zesty orange glaze, easy to make and delicious.

Orange Madeleines with Orange Glaze

1. In a mixing bowl or mixer beat the eggs and sugar until light and frothy, fold in the butter, flour, baking powder, orange zest and a pinch of salt. Chill for 20 minutes in the fridge.

2. Pre-heat the oven to 200 C, 400 F, gas mark 6.

3. Brush a 12 hole madeleine tin with melted butter or cake release spray, then lightly dust with flour.

4. Spoon the batter into the madeleine holes filling to about 3 quarters full. Bake for 8 to 10 minutes until golden and have risen. Place on a wire rack to cool completely. Repeat to make 24 Madeleines.

5. To make the glaze put the Sugar and Crumbs Natural Flavoured Icing Sugar in a bowl and add the orange juice a little at a time until you make a thin coating consistency. Add a little blob of food colouring and mix in.

6. When the madeleines are completely cool, dip half in the glaze then cover with sprinkles if using and place back on the rack to set.
