What is Lemon Spice Slice?

This Lemon Spice Cake is a spin on your regular lemon cake! The spices used in this recipe render a soothing, balanced combination of flavours embracing the subtle presence of lemon. The ingredients are in perfect harmony; rather than competing with each other, all they do is to complement beautifully.

Ingredients 

77g Sugar and Crumbs Lemon Drizzle Natural Flavoured Icing Sugar
154g Margarine
66g Wholemeal Flour 
66g Plain Flour
84g Rolled Oats
3.5g Cinnamon
3.5g Nutmeg
7g Baking powder
2 Eggs
1/2 Lemon
77g Sultanas
4 Tbsp Milk
12oz Sugar and Crumbs Lemon Drizzle Natural Flavoured Icing Sugar
Colour Splash Food Gel Lemon Colour
 
Instructions
 
Preheat oven to 180c / Gas Mark 4
 
1.  Cream Sugar and Margarine together until soft and smooth.

2. Mix both the flours, oats, spices and baking powder together in a bowl.

3. Add the flour mixture alternatively with the eggs a little at a time to the creamed sugar and margarine.

4. Add the juice of the lemon and also grated lemon zest along with the dried fruit to the mixture. Then add the milk and combine all the ingredients together.

5. When all the ingredients have been mixed together put it into a greased lined 12-inch Brownie Tin.

6. Bake in the oven for 30 minutes until springy to touch.

7. Cool slightly before transferring it to a wire rack to cool completely.

8. Mix enough water with the Sugar and Crumbs Lemon drizzle Natural flavoured Icing sugar to form a thick paste. Take a little of the icing to colour yellow approx large dessert spoon.

9. Spread the white icing evenly over the top of the cake.

10. Put the yellow icing into a piping bag and pipe long lines down the cake 1 inch apart.

11. Use a fork to drag the yellow icing across the white icing to form a feather effect.

12. Cut into 12 slices and enjoy with a cup of tea or coffee.
