200g Oats
100g Melted unsalted Butter
50g Sugar and Crumbs Lemon Drizzle Natural Flavoured Icing Sugar 
200g Sugar and Crumbs Lemon Drizzle Natural Flavoured Icing Sugar   
80g Melted Unsalted Butter 
2 Large Eggs 
2 Tbsp Natural Plain Yoghurt
220g Plain Flour
3/4 Tsp Baking Powder
Crumble Topping
120g Plain Flour 
60g Caster Sugar 
60g Softened Unsalted Butter 
  1. Preheat the oven to 160c and line a brownie tin approx 9×9 inches with baking paper.
  2. Add the oats, 50g icing sugar and the 100g melted butter to a bowl and mix to fully combine.  Spread this into the lined tin then spread evenly.  Bake in the oven for 10 min.
  3. Beat the butter and the icing sugar together, then add the eggs, beat and then add the yoghurt until combined.
  4. Fold in the baking powder and flour until mixed in fully.  Fold in the blueberries and then pour into the prepared tin.
  5. Add the crumble ingredients together in a bowl and rub them together to create crumbs.
  6. Sprinkle the crumbs over the cake until fully covered and bake in the oven for 35 mins until golden on top.

Serve hot with custard or ice cream or leave to cool and have as an afternoon tea with cream or on its own.

Best eaten within 3 days, store in an airtight container.
