Halloween Frankenstein Chocolate Cake

1. Pre-heat the oven to 180 C, 350 F Gas mark 4.

2. Line or grease two 7 inch sandwich tins.

3. Place the butter and sugar in a mixing bowl and cream together. Add in the eggs one at a time and beat in between. Add the cocoa powder and flour and beat until smooth.

4. Fold in the soured cream to the mixture and then separate evenly between the two tins.

5. Bake in the oven for 20-25 minutes until well risen and firm to touch. Cool in the tin for 5 minutes before transferring to a wire cooling rack.

6. Combine the icing sugar, butter and milk into a mixing bowl and cream together until smooth. Add in the green food colouring and beat until mixed in.

7. Take the sponges and slice off any raised areas so you have a flat sponge. Place one onto a turntable and spread a layer of the buttercream evenly across. Add the second sponge on top so the cut side is facing down and you have the baked flat side at the top.

8. Cover the entire cake with buttercream using a palette knife to get an even coat and then smooth out.

9. Chill in the fridge whilst you make your ganache drip.

10. Heat the double cream in a pan over a medium heat. As soon as it begins to bubble remove from the heat and stir in the chocolate until it all combines and the chocolate is smooth and creamy looking.

11. Take the cake back out of the fridge and pour the chocolate over the cake in the centre. Use a palette knife or spoon to gently push toward the edge so a little drips down the sides. Put the cake back in the fridge for 20 minutes so the chocolate can set.

12. To decorate stick the two chocolate buttons on the side of the cake to represent the eyes and use the chocolate gel to give each eye a pupil. Add a jagged smile and stitches if you wish.

Enjoy !
