Gingerbread Recipe – by Patchwork Cutters

This recipe will make one Gingerbread house, 26cm diameter base and cookies. Or simply make your cookies


2 Eggs

100g Brown Sugar

200g Honey

200ml Sunflower Oil

10g Baking Powder

5g Ginger

5g Mixed Spice

650-700g Plain White Flour


1. Place, sugar, honey and spices into a saucepan on a medium heat and stir until the sugar is dissolved.  Add baking powder, mix in really well, the mixture will become white and frothy.  Remove from the heat, transfer to a large bowl and cool for 5-10 minutes, stirring occasionally.

2. In another large bowl mix the eggs with the oil, start to add the honey mixture, continue to add until both mixtures are combined.  Now add the flour and mix in. When the mixture becomes thick and difficult to mix, transfer to a lightly floured surface.

3.  Knead until soft smooth dough, do not add too much flour as the gingerbread will go hard. Divide the dough into two parts, wrap in cling film.  Put in fridge to set for 30 minutes until the dough is firm.

4.  Fold in the flour gently and once starting to combine beat in the mixing bowl gently for no more than 30 seconds to achieve a smooth batter.

5. Roll out to 5mm to make your gingerbread cookies.
