Gingerbread Cookie Bars

This is a delicious Gingerbread recipe perfect for Christmas time.  Enjoy as a Christmas treat with friends and family with a nice cup of tea or even a cheeky eggnog! 

What is a Gingerbread Cookie Bar?

Its a soft cookie base with a cream cheese frosting flavoured with our Gingerbread Natural flavoured Icing sugars.

Ingredients 

300g Plain Flour
1Tsp Baking Powder 
1/2 Tsp of Salt
90g Melted Unsalted Butter 
85g Sugar and Crumbs Gingerbread Icing Sugar
85g Brown Sugar 
1Tbsp Black Treacle
1 Egg 
15ml Milk 
 
For the Frosting 
 
80g Softened Unsalted Butter Cubed
200g Cream Cheese
415g Sugar and Crumbs Gingerbread Natural Flavoured Icing Sugar 
 
 
 

Instructions

  1. Preheat the oven to 180C fan, and line a baking dish approx 9×11 with greaseproof paper.
  2. In a mixing bowl fitted with the paddle attachment beat the melted butter, sugars and trace until well combined then add the egg and beat until smooth.  Add in 15ml of Milk and mix in.
  3. In a separate bowl mix the flour, salt and baking powder together, gradually add this mix to the wet mix and beat until it forms a dough.  
  4. Spread the dough evenly into the baking dish using  palette knife.
  5. Bake in the oven for 18-20 mins.
  6. Leave to cool in the baking dish fully.
  7. To make the frosting beat the cream cheese and butter until creamy then add in the icing sugar and beat in for a few minutes.
  8. Pour the cream cheese frosting over the cooled cookie and sprinkle with sprinkles.  Leave in the fridge for 2 hours before slicing into bars.

Top Tip

Use grated chocolate on top to decorate if you prefer.

Keep in the fridge in a covered container and eat within 3 days.
