What are Giant Coconut Rings?

A Giant Coconut ring is a Crunchy ring biscuit flavoured with desiccated coconut and our delicious Coconut Flavoured Natural Icing Sugar.

322g Plain Flour

7g Baking powder

280g Desiccated Coconut

322g Sugar and Crumbs Coconut Natural flavoured Icing Sugar

182g Margarine

1 Egg

70ml Water

140g Flour for rolling

140g Coconut for the topping 


  1. Set the oven to 140c
  2. Place all the dry ingredients, (except the flour being used to roll the biscuits ), into a mixing bowl, fitted with the knife attachment .
  3. Add the margarine and mix to crumb.
  4. Add beaten egg and water and mix until a soft Dough is formed.
  5. Roll out to 1/4 inch thickness.
  6. Cut into rounds with the largest size plain cutter, and cut the centre hole out with the thick end of a piping tube or cutter of the same size as the piping tube.
  7. Brush with water and sprinkle with the remaining coconut.
  8. Bake in the oven for approximately 20-25 minutes or until golden brown.
  9. Place onto cooling racks.
  10. Store in an airtight container for up to 2 weeks.

Top Tip.

  1. You can decorate the coconut rings by dipping them halfway in melted chocolate, we use Callebaut Belgium Milk Chocolate.
  2. Make up some buttercream in the flavour of your choice and sandwich 2 coconut rings together with the buttercream.
