Easy Lemon and Lime Cheesecake

As promised, here’s a fabulous little dessert which makes use of last week’s homemade lemon curd recipe. I love a no-bake cheesecake because it looks elegant, tastes delicious, and is really quick and easy to put together.  With a buttery biscuit base, creamy cheesecake layer made with Sugar and Crumbs Key Lime Natural Flavoured Icing Sugar (or any flavour of your choice) and a layer of zingy lemon curd to finish off. Of course, if you are short on time, you can use bought lemon curd instead of homemade.

Easy Lemon and Lime Cheesecake

1. Start with the base. In a food processor, blitz the biscuits into crumbs, and then melt the butter in the microwave and stir through to make a sandy-looking mixture.

2. Divide the biscuit mix between four glass tumblers, pressing down gently with the back of the spoon to make a layer in the bottom of the glass.

3. Next, make the cheesecake mix. Simply pop all the ingredients in a bowl and give a good vigorous stirring until the mixture becomes a little more runny. Then pour into the four prepared glasses. You may need to use a small spoon to tease the mixture out into an even layer.

4. Finally, gently spoon the lemon curd into the glasses on top of the cheesecake layer, and again tease it out carefully into one even layer. Place the glasses in the fridge for at least an hour before serving.
