These Easter Chicks are great fun to make with the children. You can make them as big or small as you like and decorate them to give them their own little characters.

Instructions

Easter Meringue Chicks

1. Pre-heat your oven to 140 C, 120 C fan, 275 F, Gas mark 1.

2. Line a large baking tray with baking paper.

3. In a mixing bowl add the egg whites and whisk until stiff. It is easier if you use a handheld electric whisk or a whisk attachment on your stand mixer.

4. Add in half the Sugar and Crumbs Natural Flavoured Icing Sugar flavour of your choice and whisk again for 1 minute. Then add the remaining Sugar and Crumbs Natural Flavoured Icing Sugar flavour of your choice with a blob of food colouring.

5. Keep mixing until shiny and you can lift the whisk without the mixture falling off.

6. Cut about 2cm of the bottom of a piping bag and then add the egg white mixture to the bag. Pipe on to the baking paper by pushing down so you get a wider base and then lift to make a head. Pipe until you have used all the mix being careful to leave space between each one for cooking.

7. Place in the oven and bake for 30 minutes or until they are crispy and can be lifted from the paper.

8. Leave to cool on a cooling rack or on the tray for 15 minutes.

9. Decorate by doing two dots for the eyes in black or brown.

10. Two lines for the legs and three little lines for feet at the end.

11. For the beak use a orange or yellow pen to make a triangle shape

12. Use red to do a bow or blue for a tie.

PS - Hold the meringue lightly as it will crack if held tight
