3 Egg Yolks 
40g Plain Flour 
40g Sugar and Crumbs Natural Flavoured Icing Sugar ( I Used Salted Caramel ) 
30g Dark Brown Sugar 
240ml Milk 
100ml Double Cream 
  1. Whisk the Egg yolks, flour and sugars together until thick and creamy and light in colour.
  2. In a saucepan on low heat, heat the milk to a gently simmer, take off the heat and dribble into the egg mix slowly whilst whisking at a low speed.  ( so not to scramble the eggs )
  3. Return to the pan and simmer again over low heat, stir until you have a thick paste and it forms ribbons when you lift the spatula.  Push through a sieve to remove any lumps.
  4. Leave to cool and then refrigerate 
  5. Once fully cold, whisk the cream until thick and then fold this into the cooled mixture, keep it in the fridge until using.
  6. Best eaten within 3 days.
