Cookie Dough Cake Bars

Who doesn’t love cookies? Well now you can have Cookie Dough Cake Bars Just follow this recipe for a delicious traybake.

A Cookie Traybake that is moist on the inside with a slight crunch on the outside.

225g Unsalted butter – softened

150g Light Brown Sugar 

75g Sugar and Crumbs Natural Flavoured Icing Sugar ( Flavour of your choice)

2 Large Eggs 

270g Plain Flour 

1 Tsp Bicarbonate of Soda 

1 Tsp Salt 

350g Chocolate Callets or Chips 



1 Preheat the oven to 160c  and line a brownie tin with baking paper approx 8×8 inches 

2 Beat the butter until creamy then add the sugars and beat in until fully combined, add the eggs and beat again.

3 In a separate bowl mix the flour salt and bicarbonate, add these to the wet ingredients and mix until just combined.

4 Add in the chocolate and fold in.

5 Spread evenly into the tin, add more chocolate callers to the top and bake in the oven for 25 mins.

6 Leave to cool completely before slicing.  They should have a very moist texture so don’t worry that they are not cooked.

Best eaten within 5 days, store in an airtight container.
