125g Unsalted softened Butter 
100g Light Brown Sugar 
100g Sugar and Crumbs Flavoured Icing Sugar (of your choice)
1 1/2 Tsp Baking Powder 
1/2 Tsp Bicarbonate of Soda 
1 Large Egg
300g Plain Flour 
Pinch of Salt 
300g Chocolate Chips/Callets or Smarties to match your flavour choice
Gel Colouring in 3 colours
1  Beat the butter until creamy, add in the sugars and cream together until combined.
2  Add in the egg and beat in well
3  In a separate bowl add the flour, salt, baking powder and bicarbonate and stir in.
4  Add the dry ingredients to the wet ingredients and mix until combined.  Add in the chocolate and mix again.
5  Split the dough into 3 equal parts and then colour each part in a different colour, mix in until the colour has mixed in well.
6  Using a scale take a little bit of each colour and weigh until you get a 60g approx amount and roll into a ball.  Repeat with all the dough until all the dough is used.
7  Freeze the balls in the freezer for a minimum of 30 mins ( you can leave them in the freezer for 3 months and just take out however many you want to bake at a time.
8  Lay some baking paper onto a baking tray and place the cookie balls straight from the freezer evenly spaced onto the tray, bake on 180c for 10-12 mins until golden.  They will continue to cook when you take them out so don’t worry if they look a little wet still.  Leave them to cool on the tray for a few minutes before transferring to a wire cooling tray.  Eat warm or cold, they are best eaten within 4 days.
