To make the churros

Combine the  70g of Sugar and 30g of the Cinnamon Swirl icing sugar together in a bowl and set aside

Line a plate with Kitchen paper and fill a medium heavy based pan with the vegetable oil so it is 3- 4 inches deep, please make sure you have 3 inches at least above the oil to stop it from boiling over

In another small saucepan add the water, 1 and 1/2 Tbsp Sugar, salt and 2 tablespoons of vegetable oil, place over a medium heat and whisk, as it starts to heat up stir in the flour, keep stirring until it forms a dough ball

Turn on the Oil pan to a medium heat and heat the oil upto 375F/190C ( keep an eye on it, you should never be far away)

Transfer the dough to a cloth or reusable piping bag fitted with a star tip

Carefully pipe the dough into the oil in lines, using scissors to cut at about 4 inch sizes, to release into the oil, pipe 3 at a time and cook until golden brown

Take out using tongs and pat with the kitchen roll and then roll in the cinnamon sugar mixture

To make the Chocolate Dip

Add the cocoa powder, sugar and water to a saucepan and place over a medium heat, bring to the boil and stir until all the ingredients have dissolved

Take off the heat and stir in the butter until melted, leave in the pan to cool and firm up before giving another stir

Transfer to a dipping pot and enjoy with your churros
