Chocolate Lime Meringues

Soft and chewy meringues with a delicious chocolate flavour.  I've used our Chocolate Lime Natural Flavoured Cocoa powder but it would work just as well with our other 4 Cocoa Powders, Chocolate Orange, Chocolate Cherry, Chocolate Chilli and Chocolate Coconut.

Chocolate Lime Meringues

1. Pre-heat the oven to 150 C, 300n F, Gas mark 2.

2. Line a baking sheet with parchment paper.

3. Place a heatproof bowl over a pan of water making sure the bowl doesn't touch the water and no water can get inside of the bowl and turn on to a medium heat.

4. When the water begins to simmer place the egg whites and the sugar into the bowl and stir until the sugar dissolves.

5. Remove the bowl from the heat and use an electric whisk to mix the egg and sugar mixture until it begins to thicken, turn white and start to gloss. Add in the cornflour and whisk again.

6. Sieve the cocoa powder and gently fold into your meringue mix. Try not to mix in fully so you still get the cocoa powder swirls.

7. Spoon the mixture onto the baking paper in 6 large dollops, using the end of the spoon to encourage the meringue to whip up in the centre.  Place in the oven for 1 hour and 10 minutes.

8. Once they are cooked, turn off the oven and leave the meringue inside to cool completely with the oven.

9. Serve with a drizzle of cream and some fresh berries.
