1. Combine all the ingredients except for the chocolate in a mixing bowl and beat for about 3 minutes.
2. Break off sections and roll into a small ball. Flatten and place on a tray lined with waxed or parchment paper.
3. Place in the freezer for 10-15 minutes.
4. Then, melt the chocolate and dip half of each disc into the chocolate. Allow excess to drip back into the bowl then place back onto tray to set.
