Chocolate Biscuit Cake by Emily Coyle

Chocolate biscuit cake, also called tiffin cake, is in fact a favorite in Irish coffee shops and restaurants.

It’s made with chocolate and crumbled digestive and rich tea biscuits, it’s a perfect cake for summer. No need to turn the oven on.

What is a Chocolate Biscuit Cake?

Chocolate biscuit cake is a type of no bake tea cake, similar to American icebox cake, found in Irish, English, Danish and Jewish cuisine. It is made with digestive biscuits and is optionally prepared with a chocolate glaze.

Furthermore, one of the advantages of this dessert is that you can prepare it in advance, eliminating some stress on the day of your party! It will keep for up to two weeks in the fridge.

Ingredients

360g Butter
1Kg Milk Chocolate
250ml Double Cream
600g Broken up Digestive Biscuits

Instructions

1. Melt the butter and chocolate in the microwave in 10/20 sec bursts, you don’t want it to burn!!

2. Once the butter and chocolate are melted, add the double cream and stir until it’s well combined.

3.  Then, add the broken up biscuits and keep stirring well.

4. Put your mixture in a cake tin and leave it in the fridge for three hours.
