What are Chocolate and Nut Meringue Biscuits?

The Chocolate Meringue Biscuits are made using our New Whipping It Up Product. They are lovely and crisp on the outside with a soft chewy center with melted chocolate and topped with chopped hazelnuts.

125g Sugar and Crumbs  Salted Carmel Flavour Whipping It Up
50ml Room Temperature Water
18g Sugar and Crumbs Natural Flavoured Cocoa Powder
25g White Callebaut Chocolate or Milk and Dark Callebaut if you prefer.
12g Chopped Hazelnuts or any nut of your choice
Preheat oven to 180c / Gas Mark 4/ 350F


1.  Place the Whipping It up in a grease-free mixing bowl and add the room temperature water.

2. Whisk on a low speed to start with until all the powdered mix has combined with the water. Scrape down the bowl to ensure all loose mix is now combined.

3. Turn up the speed on the mixer to high and whisk for around 7 minutes until the mixture has formed stiff peaks.

4. Tip the Sugar and Crumbs Natural Flavoured Cocoa Powder into the meringue mix and mix slowly until it has combined with the meringue.

5. Fold in the Chocolate Chips.

6. Using a dessert spoon carefully spoon the mixture into small dollops on the greaseproof paper and gently flatten using the back of the spoon. When all the mixture has been used sprinkle a few chopped hazelnuts onto the top of each meringue. You can omit this part if you do not want to use nuts in the recipe.

7. Bake in the oven for 12-15 minutes until the tops are firm to touch and have a cracked appearance.

8. Allow them to cool completely on the greaseproof paper before gently peeling them off and putting on a wire cooling rack.

9. These Chocolate and Nut Meringue Biscuits will keep up to a week if stored in an airtight container.
