Cherry Bakewell Flip

This cheeky little cocktail is full of the flavours of spring with a dash of Sugar and Crumbs Cherry Bakewell Natural Flavoured Icing Sugar (or any flavour of your choice) to bring you cherries and almonds, spiced up with a splash of rum. In case you haven’t tried one before, a ‘flip’ is a cocktail made with cream and raw egg, shaken over ice until the egg ‘flips’ or starts to froth. It’s absolutely fine to consume raw egg as long as you make sure it’s nice and fresh, but just in case, this cocktail shouldn’t be served to anyone whose immune system might be compromised.

Note – if you don’t have a cocktail shaker just use a large jar with the lid screwed on tightly.

Cherry Bakewell Flip

1. Prepare the glasses. Spread out the chopped almonds on a plate. Crack one of the eggs into a bowl and beat briefly with a fork. Then dip the rim of each glass into the egg before rolling it through the almonds so that they stick. Stand the glasses upside down.

2. Next, make the cocktail. Vigorously shake the brandy, the other egg, the Sugar and Crumbs Cherry Bakewell Natural Flavoured Icing Sugar (or any flavour of your choice) and the double cream over plenty of ice for about ten minutes until the mixture is thick and frothy.

3. Strain the cocktail into the four prepared glasses. Finish each one with a glace cherry on a cocktail stick (you might find, if you want to balance it on the rim, that you need another cherry on the other end of the cocktail stick as a counterweight). Serve straightaway.
