Carrot Cake Traybake with Cream Cheese Frosting

What is a Carrot Cake Traybake?

This traybake is a different prospective on a traditional carrot cake, it makes it easier to serve and transport, a great treat to have with a cup of your favourite beverage with your family and friends over a chat.

50g Sugar and Crumbs Cinnamon Swirl Natural Falvoured Icing Sugar 

225g Light Muscavado Sugar 

4 Large Eggs 

250ml Sunflower Oil

200g Grated Carrot 

300g Plain Flour 

2 Tsp Baking Powder

200g Dried fruit (raisins, sultanas or mixed fruit)


250g Cream Cheese 

100g Sugar and Crumbs Orange Zest or Cinnamon Swirl Icing Sugar 



Preheat oven to 180c Fan 

  1. Line or grease or a baking tin approx 34cmx24cm.
  2. In a clean mixing bowl, whisk the eggs, sunflower oil and the sugars.
  3. Stir in the grated carrots and dried fruit then fold in the plain flour and baking powder until combined.
  4. Pour into the baking tray and bake in the oven for 35 mins until golden and risen .
  5. Place on to a cooling rack to cool completely.
  6. Once cooled make your topping, beat the cream cheese and ising sugar together for a few minutes until mixed in and smooth.
  7. Spread the cream cheese topping over the traybake so you get an even layer.  Optional – use some remaining icing sugar to dust and serve.
