Anzac Biscuits

What are Anzac Biscuits?

The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter, golden syrup, baking soda, boiling water, and desiccated coconut.

Ingredients 

85g Porridge Oats
85g Desiccated Coconut
100g  Sugar and Crumbs Coconut Natural Flavoured Icing Sugar 
100g Plain Flour
100g Butter + a little extra for greasing your baking trays
1Tbsp Golden Syrup
1 Tsp Bicarbonate of Soda
 
Makes approximately 20 biscuits
 
Instructions
 
 
 
Preheat oven to 180c /  Fan oven 160c / Gas Mark 4
 

1. Into a bowl put the oats, coconut flour, and icing sugar.

2. Melt the butter in a small pan and stir in the golden syrup.

3. Add the bicarbonate of soda to 2Tbsp of boiling water then pour into the golden syrup and butter mixture/

4. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture.

5. Stir gently to incorporate the dry ingredients.

6. Put dessertspoonfuls of the mixture on to lightly buttered baking trays, about 2.5cm / 1 inch apart to allow room for spreading.

7. Bake in the oven for 8-10 minutes until golden brown.

8. Transfer to a wire rack to cool.

9. Enjoy them freshly made with a cup of your favourite beverage.
