Chocolate Mint Cupcakes

Rich and Creamy Chocolate Buttercream smothers these chocolate cupcakes giving a minty freshness

Instructions

Preheat the oven to 180c and place cupcake cases in a baking tin

Beat the butter and the sugar together in a mixing bowl or mixer until creamy, add in the eggs one at a time mixing in inbetween

Add the self raising flour and cocoa and gently fold in before beating together for 30 seconds on a medium speed

Spoon the mixture into the cases until they are 3/4 full

Bake in the oven for 20-25 mins until fullen risen and bounce back when touched

Leave to cool completely while you make the icing

To make the icing beat the butter until its nice and creamy then add the icing sugar a little at a time to avoid an icing cloud until its all mixed in.

Add a little hot water if it needs softening

Place in a piping bag with a nozzle of your choice and pipe onto the cupcake as desired, sprinkle with chocolate shavings if using
